I was out with a friend from the choir earlier and hence this explains the lack of a proper theme for tonight’s dinner! Everything in the fridge was thrown together in 30 minutes flat.
Still enjoyed it though…
I can’t get enough of the nice sunny weather here! Summer is London at last.

We’re going through a “grilling” phase this week, hence the lack of soup pictures! Not that I’m complaining anyway, the occassional grilled chicken breast and puds is very much welcome.
And besides we don’t get Jersey Royal potatoes every day of the year, which makes this meal seasonal!
I marinated the chicken breasts with teriyaki sauce, steak seasoning and a sprinkle of sesame seeds.

Lovely!
Cod is one of my favourite fish. The melt-in-your-mouth texture is really something to rave about..
This is what we’re having for dinner. Simple grilled cod with teriyaki sauce, a side serving of butter and herb potatoes and some mixed vegetables.

Mmm…delicious!
I love eating fish. However fresh fish at a reasonable price is rare in London- hence I advocate the purchase of frozen fish fillets.
I had no idea what a Pangasius would look like in real life, but in its raw, skinless, boneless and frozen form, it looked promising. Here’s what I cooked for our dinner tonight:

I prepared two types of mash: sweet potato and regular potato mash. Also stir-fried some button mushrooms to go with the fish.
Verdict: The texture of the fish is very smooth. Not flaky at all like the tilapia fillets I bought from Chinatown. The only downside is the fish fillet is rather thin, which means if you have big eaters in the house, you probably need to cook two fillets per person.

I simply love it when my other half whips up his signature roast turkey. On a rare occassion when we do get great cuts of turkey (i.e. crown breast or leg of turkey), I get to savour the fruits of his labour!
Here’s what we had for lunch during the Bank holiday weekend, apart from Bak Kut Teh:

Delicious roast leg of turkey with sweet potatoes. Yummy!!

Washed down with a glass of Riesling… divine!
Last year we went to Cornwall and were mesmerized by the beauty that the west country had to offer.
During the last Easter holidays Arch treated me to the sights, scenes and tastes of Wales.
I had a wonderful time there and here are some pictures I want to share with all of you.

We found Pork Shanks! Tu Ka!
And what else could the head of the family do with it? Cook Bak Kut Teh, of course.

My visit to the shrine of Gluttony is officially complete.
1st of June 2009. The midst of British summertime and also the first day of the 2nd half of the year. There will be changes, new hopes and aspirations. I can’t wait.
During the Planets concert last Friday, one of my fellow choir members said something which rang like church bells in my ears: “If you want to do something, do it now. Never wait until you retire or until you have free time, because when you do wait, a few years would have flashed past you and you would regret not taking action in the first place.”
Well said indeed!
